I use this Salsa recipe for serving atop fish. It's a nice change from regular salsa.

Pineapple Salsa

1-1/2 cups chopped fresh pineapple
1 to 2 medium yellow tomatoes (easily found in grocery stores)
1/2 cup chopped red onion
1/4 cup packed cilantro leaves, finely chopped
1 jalapeño pepper, seeded and finely chopped
1/4 teaspoon kosher salt

Combine the pineapple, chopped yellow tomato, red onion, cilantro, jalapeño, and salt to make salsa. You could add some chopped yellow bell pepper if you like.

You could also add some fresh corn to this Salsa to make a nice salsa to put over nachos.
