Papaya Salsa
- nice change of pace from tomato salsa -
2 Ripe Papayas, seeded and cubed
2 Seeded and chopped jalepenos
1 Cucumber, peeled, seeded and chopped
1 cup chopped Red Onion or Walla Walla (something sweet)
1/4 cup chopped fresh cilantro
1/4 cup chopped flat leaf parsley (you can omit the parsley and double the cilantro if you like cilantro - I prefer a milder flavor)
1 tablespoon of Lime Zest
The juice of two fresh limes (at least 1/2 cup)
Basically, you just toss it all together and let stew in the fridge for a few hours before serving. I serve it on top of Wahoo or any white meat fish,on top of grilled pork chops, or as something to dip some grilled Crostini into.
If you want this to be hotter, just use peppers with more heat.
