Not as good as what I see around here but my best effort yet. Even the wife said something nice about them. I thought my 6yo was going to choke on a bone he went at it so fast. 5.75hours at a fairly strict 225 degrees of indirect moist heat. Rested maybe 15 minutes before I was pressured into cutting them. Nothing but a pile of bones after about another 10 minutes. Good times.
Trimmed, seasoned and ready to go.
Right at 5 hours. Looks like a pig-o-pede.
