Here's a little something I found online and I tried recently, and turned out pretty good, by and by. Basically you lay your onions and pepper directly on the coals, and pretty much destroy them there. Then scrap off the char and harvest all the edible regions. Keep the outer most parts of the onions that you can. The relish has a favorable smokey taste to it, and went great on hot dogs, but I reckon you could put it on all matter of things. Burgers maybe? It was good tho, and something different to do at the pit.

Seems a bit harsh and a waste of outer layers....... and way too fast to get smoke flavor.....my 2 cents:rolleyes:
