happy 4th to all my BBQ brothers. we had a fish feast today, lots of good food thought I would share some pics:
brined some salmon (water, salt, brown sugar, brags liquid aminos and various spices) for 4 hours

after some drying time it was brushed with maple syrup and rub

we live in michigan...gonna try a griff loaf as soon as my kids get back home...I am guessing that is your recipie?
 
Fish looks great. Question, I have the exact same setup that you have. How long did you maintain that 200 degree temp with the small amount of lump, bricks and wood that you had in the smoker?????
