I hope it's not sacrilege to grind up a tri-tip but that's what I did tonight.
I took this.
...and turned it into this, seasoned with that.
...and then turned that into this.
Charred a poblano over the gas-assist.
Everything ready for the fire.
On, after the only flip.
Indirect to finish. Mine got a slice of the poblano. The women wanted theirs sans peppers.
Cheesed.
Off.
Plated with some homemade pasta salad and guacamole salad.
