Christmas Eve Rib Roast

First of all, "Merry Christmas!!!"
Here is how I made this:
I scored a prime rib roast at HEB plus on Saratoga for around $27.00 for a 4 pounder....

Seasoned with Adams reserve " Truffle Salt & Peppercorn & Garlic seasoning"
Smoke Seared at 450 degrees in my kamado with a chunk of mesquite for 20 minutes.

Put in the oven at 325 for 20 minutes per pound until the internal temp was 135 degrees..

Placed a tent of aluminum foil and let it rest for 25 minutes..

Carved and pigged out...

Good to know that you are back to work Sapo. Times are tough. Just having a job is something to be thankful for these days.

Hey Sapo Merry Christmas. Fine looking groceries. Havent seen any of those Adams spices in the big jugs like that down here yet. I will keep an eye peeled to find some. Tell my chum Howard Butts aka old Howie we need a dozen or so HEBs in the the DFW Area. I have heard claims they could put every grocery store in town out of the grocery bizness quickly. Super nice folks who run that operation.
