Mexican Meatloaf

Wanted to see if I could make a healthy meatloaf and think I succeeded. Tried to use southwestern flavors mostly. One lb of ground bison and turkey, can of creamed corn,cilantro,cheese, onion, chili seasoning, oat bran, black pepper. Wanted to also add some finely chopped pickled jalapenos but forgot to add them.

Loaf formed and sprinkled a little more chili seasoning on top. Cooked at 350* with a little hickory chips that I found in the garage. Its amazing what you find in there when you actually clean it a little.

Meatloaf at 130* Added some sauce on top. Sauce consisted of some ketchup, chopped cilantro and some chipotle pepper in adobo sauce pureed in a blender

Meatloaf at 163* and added some more sauce and a little shredded cheese.Pulled when it hit 165*

Plated with some refried beans, Spanish rice. When I remembered I forgot the jalapenos I added some hot carrots to the plate too, not pictured. Great tasting meal and didn't miss the beef on this one.

Correct on the meat, one lb each. I'm guessing around a cup of oat bran.
