After doing a double take on pork tri tip at the butcher shop (Bruce's Prime Cuts)...I had try some. I'm not sure if it is really another cut...but, anyhoo, I picked up two pieces for a total of about 4 pounds. Did one with Fatz PigPowder (good stuff!!) and the other with Santa Maria Style seasoning. Seared and then indirect until done. My friend and two family food critics didn't leave me much of the seasoned Fatz. Tasty! The SM one is for lunch tomorrow.

Ya know, his wife whips out two cryovac bags of these tri tips and takes mine from the bags. I am not convinced they are pork TT for some reason. I have to go back Saturday and pick up an order, I will ask if they really are TT or a different cut they call TT. I think I will stick to beef TT for the time being :D

Cushion was the cut they called pork tri tip. Interesting.
