0.99/lb Brisket & Spare Ribs

HEB had a special on spare ribs and brisket. They were selling like hotcakes so I got some and smoked them on the WSM 22" with charcoal & hickory chunks... Rubbed both with stoned ground mustard & Suckle busters comp #1. Never checked the temp of the meat, just went by slow & low. Also sealed them in oven bags toward the end and lessened the heat until the pit cooled off. Never got in a hurry. Made the food for the next day... Enjoy Friends! !!!

It was great.. I put a very thin layer so it really didn't make much difference... The coworkers loved the ribs and brisket when I got back to work... More for today...
 
Great job Sapo. Looks like that large bore WSM is just whut the doctor ordered for ribs. Aint seen .99 spares around these parts since Moby Dick was still just a minner. Now did just snag some 7 bone chuck roast for that price at Tom Thumb (Safeway). Been a few years since I seen chuck that cheap. On sale it usually 1.99 and close to 3 bucks for everyday purposes.

Because I was in a hurry to get started and I am lazy for the most part.
 
That looks awesome. Seems like the bigger WSM might end up on my wish list.
