Been playing with a bourbon marinade. Received some Maple Syrup from Scott which I think is a great compliment to Bourbon so I made a pork loin. It was really tasty. Next time I will be using more bourbon in the marinade and possibly in me as well. :D

Served with Spicy Fruit Salsa, Bourbon Sweet Potatoes and Boiled Peanut Slaw.

Recipe and notes for Bourbon Marinade;

1/2 Cup Bourbon
1/3 Cup Maple Syrup
2 Tablespoons Honey - Sorghum would have worked well
2 Tablespoons Mustard
1/2 Tablespoon Salt
1 teaspoon Onion powder
1/2 Teaspoon Ginger powder
1/4 teaspoon ground Black Pepper

Notes: Could have used 1 cup of bourbon and a touch more maple syrup. I took left over marinade and added 3 tablespoons of water and a teaspoon of arrow root to make a glaze. Glazed last 15 minutes of cook twice.
 
Believe me If I can make it, you certainly can do so as well. Here are the rest of the recipes.

Spicy Fruit Salsa: I have also used blueberries etc. When making for pork I almost always use Papaya.

2 plums, pitted & diced salsa size
2 Nectarines, same condition
1/2 to 3/4 of a fair sized Papaya, skinned and diced salsa size
3 or 4 Tablespoons Jelly. I used a homemade Jalapeno Jelly I made but orange marmalade is excellent for this.
1 Tablespoon of a decent hot sauce.

Toss this all together and serve over pork or chicken. You can use what ever fruit you like. I have tried pretty much all of them at one tie or another and they are all good.


Bourbon Sweet Potatoes

5 or so good size Sweet Potatoes or Yams
1 stick of butter
1/2 cup Bourbon
1/3 Cup Brown Sugar

Boil Sweet Potatoes whole until tender, about 30 minutes. Remove from water and pull off skin. Slice lengthwise and layer in a greased baking dish.

In a sauce pan melt butter and add brown sugar and bourbon. Once sugar is dissolved pour over sliced sweet potatoes. Bake at 350 until bubble, about 20 minutes or so.


Boiled Peanut Slaw Again you can make slaw out of just about anything and add boiled peanuts but here is what I did.

1 cup boiled peanuts
1 medium stalk celery, diced
1/2 red bell pepper, seeded & diced
1/2 pablano pepper, seeded & diced
1 medium carrot, grated
1 cup diced Jicama, skinned and diced
1/2 head green cabbage, cut really thin

2/3 cup mayo
1/2 cup sour cream
1/4 cup honey
2 Tablespoons mustard
2 Tablespoons Lemon Juice

Toss all this together in a bowl. Chill and then mix up just before serving.
