I'm trying to get a handle on pricing a pit cooked pig. What would you guys charge for a 130 pound (dressed wt) pulled and served? This includes several sauces. NO rolls, sides or drinks......just chaffing dish meat served.

Depends what price you pay for the pig. I did one a while back I paid $2.10 per lb and sold the job at $5 per lb. Didn't make a killing, but they were satisfied.

If they will agree to it I would say go for it. Here are some photos of the little guy I did. He was only about 40 lbs. Good luck

Wow, DJ, my $800 cooks don't sound so high.
I just trying to find out where my prices drop in on the scale.
I guess I'm just a couple ticks above average.
But then, they are getting a hell of a good looking cook in the bargain.

This one was the exception to the rule :)
Normally. I'm $17.95 w/3 sides and we serve (60 plate minimum). This past one was an assisted living complex, (high end), with full kitchen and staff. They paid $12.50 for 150 plates, 7% tax, and $75 for me to pick/pull...$2001.00 very sweet.

Pigs

is that a COOKED pig laying on a table with precooked blood on it?

No Gary. I bleach the hell out of the table and blow it down with hot water. Hog grease get's down in the wood and no mater how much 100% bleach I use, it still looks black. The health goon's did a swab, and I came up clean. Granted, it's not pretty, but it works.
