actually, the theory about how bbq started being chopped so
fine in eastern NC years ago is so the older folks with few or
no teffuses could eat it too.
 
Well that a good theory but unfortunantly full o holes cuz cows aint allowed to climb on the bbq pit in the Carolinas and the sign clearly say Tender Beef. My theory is that some old grand prize winning comp cook from Texas who decided to open his own joint. He still cooking for the judges. If it dont take a spatula to move the brisket it too tough:)
