need more details big guy? What you cooking on? WSM? I go with a 2-1-1 method...2 hours in the smoke, 1 in foil, 1 in the smoke again.
Around 250.

If you're cooking on a kettle, times will be a little shorter.

I am using the Char-Griller offset. The ECB has been giving me fits lately. I should just bite the bullet, and buy the WSM.

Yeah, buy the WSM it's money well spent. Otherwise, follow Cappy's advice and you'll be in good shape.
