had to use up some sausage meat and bacon in the fridge, so I made my own version of a fatty:

LOOKS GOOD

but I have to ask, how do you get it to roll up like that? do you use the foil and start that to roll? I Have a Traeger as well, what temp/setting and how long? Just wondering, thanks in advance. pete

it wasn't easy - I did use the foil, however, I was having trouble with the ends so I had to use my hands to "squeeze" it closed.

next time I am going to shape the roll first, then "cut" it in half and stuff the middle.

digital was set at 225F - it reached 160F internal in 2 hrs

anything around 20F is shorts weather here in Canada - if you look closely at the 2nd last picture - you can see my reflection in the window

If it goes back to -25F again like it was last week, I will have to go and buy a sweater. :)
 
Dang sounds like you fellow del Norte Americkonos has become acclimatized to cold weather eh? I had an old chum originally from Toronto (think that one is fairly close to Amarillo) but he never did get used to the cold. He migrated South till he hit Jouston and stopped when he realized he did not need the insulated underwear any longer. He was a little skinny guy. I used to have to go over and help him kick start the Harley Sporster 1100 USA Cubic inches. That aint no task for a 98 pound weakling ya know? Now why he winded back up in N. Texas I aint sure. Only thing twixt us and the N. Pole is a barbed wire fence and a few Canadians ya know? He musta had a good reason to come back to the cold country I just forget whut it was right now.
