Baked Tilapia Parmesan

Tilapia Parmesan

1 pound Tilapia or other lean fish
2 Tablespoons dried breadcrumbs
1 Tablespoon grated Parmesan cheese
1 Tablespoon fresh basil, chopped
1/2 teaspoon paprika
Dash pepper
1 Tablespoon margarine, melted
2 Tablespoons fresh parsley, chopped

Move oven rack towards top of oven. Heat oven to 500 degrees. Spray rectangular glass baking dish with nonstick cooking spray. Mix all ingredients together except fish, margarine and parsley. Brush one side of fish with margarine, dip into breadcrumb mixture and place fish coated side up in pan. Baked uncovered about 10 minutes or until fish flakes, sprinkle with parsley.
