So I go to the store looking for ribs, and I ask my usual question "Do you have any fresh brisket?" (they never do). To my surprise, they said Yup. So I came home with a 8 lb flat instead of ribs. I threw it on at 11:30, and sliced it up at 5:00. The WSM settled in at ~325 with all vents open.
The wife was babysitting 3 girls who never had BBQ'd brisket before. They loved it. They said the smoker smelled like bacon was cooking.
