How much Beef for 50 people

What cut are you thinking of for the beef?

I find bottom or top round works well, but I yield about 80% for the most part.

Sammie and a half is a good average with 3 sides.

75 X 5.33 = 400 Oz
400 / 0.8 = 500 Oz
500 / 16 = 31.25 lb

So if you're cooking 40 lbs you'll have enough for an extra 21 sammies.

I vote that we get rid of the dumb "if train A leaves New York on Monday and travels at 100mph and train B leaves L.A. on tuesday travelling at 150mph, in what state will they crash?" for algebra and use something like this is useful. Good luck and let us know how it turns out.
