Dill Pickles

How'd they turn out :?: I've been trying different recipes for years and have yet to make any I like as well as store bought - can't get them crisp enough. Sat, I started a batch made from the supposed Clausen recipe for kosher dills.

Ice the pickles down for a few hours before you brine them ;)

Cappy invented GPS tracking bracelets. He's like to call them "Cappy BLING".
 
Ok, here's my closely guarded pickle recipe. Took much experimentation. Follow the measurements very closely.
After a week IN THE FRIG you will have crunchy dill garlic pickles.

Enough for 2, plus a little more, pickle jars. Slice pickles at least in half long wise.


8 pickle size cucumbers
2 1/4 cups water
1 cup white vinegar
2 tsp salt
1 1/2 tsp sugar
1 tsp ground black pepper
2 tbs dried dill seed
2 tbs dried dill weed
3 cloves minced garlic
1 tsp whole mustard seed



Mix all ingredients in sauce pan, except pickles and garlic. Bring to a simmer and let cool. Stuff pickles in 'saved pickle jars' and add cooled brine. Divide garlic between jars. KEEP REFRIGERATED.


Yield: 2 1/2 cups juice
 
I never tried it. Sure can't hurt anything. I thought it was pretty cool that I washed the dirt off first.
 
The last batch I made had some leftover juice. I cut up some onion and ripe tomatoes and stuffed into a jar.
4 days have passed and I tasted it tonight. The Toms were way good, better than I expected. I also dropped a hard boiled egg in there too, but it's too early to try it.
So, after finishing the pickles, load the jar with toms.
