I bought a dressed rabbit today at the local farmers market with the idea of frying, stewing with gravy and biscuits or both. Problem is I've never butchered one and could use whatever rabbit fixin advice (butchering, recipes, spices, etc) you'd like to offer. :? Used to eat it as a kid at grandma's, but it just showed up on a platter ready to eat. Thanks

For frying or seething I always just cut off the back and front legs and cut it half in two across the backbone. If you want to smoke or slow grill it and depending on the size of the rabbit..you can either leave it whole or split down the middle and wrap with cheap bacon held in place with toothpicks. I was usually dealing with small cotton tails and just left them whole. Hope this helps. Should be a million recipes on Google too.

I have always cut the arms and legs off, then trimmed the back of any crappy looking bones and stuff.
Take a pass on shaved crispy skin.
