We did a little Mex food tonight.

Started with chicken breast tenders

Notice El-cheapo pizza stone heating up.

Oh, and the cast skillet

Then cut up the chicken and built a quesadilla with cheese and some jalapenos from the garden and some chopped green onions

Did the 'smash thing' for a few minutes to set the cheese. And then flipped them over to direct to give them color

Then cut them up and served with spanish rice and sour cream!

Next up is brisket.
 
AND, if you want healthy, switch to wheat tortillas and white cheese. Keep the grill at less than 400, say around 350, that way you got time to react before burning them up.

These work perfect on the last leg of a load of charcoal on a kettle grill. Your in no hurry so who cares if it takes a few more minutes to melt the cheese and brown the tortilla.

Doing shrimp ones tonight!
 
Thanks! I'm telling you. You can make these in your sleep and not go wrong.

Here is left over grilled skrimps with italian cheese, sweet basil and cilantro from the garden, some cheddar cheese, and a little EVOO

I came close to making that last night. I went to the store and bought all the things I didn't have, but when I got home, Melody had two large chicken breasts marinating in a Vidalia dressing. So I made the Spanish rice and some corn and grilled the breasts. Served with iced tea and I had a Guinness. :D Tonight for sure!
