For those of you who have access to eggs direct from the hen, or from
the store or farmer who owns the hen:
I have fresh eggs from hens, and have been avoiding hard boiling
them because they are just too durned hard to peel.
Cooks Illustrated to the rescue!! AGAIN!!
With a thumb tack or map pin, poke a hole in the WIDE end of the egg.
Place the eggs in COLD water, bring to a hard rolling boil. Turn off
the heat, cover and let sit for TEN minutes.
With a slotted spoon, remove the eggs from the hot water and plunge
into an ice-cube and water bath and allow to sit til the eggs are cold
all the way through.
Crack and roll, til the peel is loose, peel.
So far this has worked with nary a crumble, scrape, missing chunks of
egg or bad language.
