Asian Cabbage, Carrot and Peanut Slaw

My wife found this recipe and made it tonight. We all thought it tasted great!

3 Tablespoons Rice Vinegar
3 Tablespoons Cilantro, Chopped
2 Tablespoons Sugar
2 Tablespoons Low sodium soy sauce
2 Teaspoons Sesame oil
4 Cups Cabbage slaw mix
2 Cups Carrot, Shredded
1/3 Cup Salted peanuts, Chopped

Whisk together first 5 ingredients. Toss in the cabbage, carrots and peanuts. Season to taste with salt.
 
Wow, half as much carrot as cabbage! Trying to imagine the peanuts. The sauce sounds good -- cilantro is a surprise. I'll have to try it. Thanks! :)
