Hey guys I wanted to work on making a video and I was bored on my day off so I made a Video on how I make up Chicken Thighs. I think I did some good things but made some mistakes too.

The info is good and I like it when you learn cooking stuff while learning a recipe. I hope there was some of that and not too much joking around. the recipe is rock solid tho and very good.

My time is too long. 10 minutes is too long but it is cus I did the "Light the Fire" part. Having to film myself took another minute overall too. Sorry

Great video Mike.

I'm from New Orleans and I remember my dad saying the "kitchen zink" he also would say "monaise" for mayonnaise. He passed away 31 years ago so it is sometimes good to hear words he said. I've lived in North Carolina for 21 years now but do get back to Louisiana about every other summer.

Thanks guys and thanks Greg for the PM'd critique I asked for.

I'm still finding myself on film and developing my own character. It's hard not to talk like JB when he's the guy I watch the most but I'll try harder not to steal his "shtick". I useually say "guys" not Boy so I'll have to work on that.

The info was mostly good. I did say Skin down when I had skin up on the Chicken too.

I should have left the weed torch part out too to keep it shorter.

That is an Awesome 37" Open Pit Grill. It can be bought as a stand alone grill for the back deck but this is on the front of one of my Peoria Custom Cookers.

When I ordered the [3] Pits for the business it was my partner's idea to get [2] Pits instead of [1] great big pits. He knew I would get busy and double booked and would need to do 2 parties at the same time and yes it has happened.

So I picked a 24" x 72" basic sized cooker and added different options to each. The third pit came when we were getting such a good price Tim could not resist buying another one for his Crab House/ Tiki Bar.

The Small pit has the smoker but was made double wide to include that nice Storage box on the side. It's sweet and pulls like a dream behind even my small truck.

My big cooker is the same but extended on the front to include that grill. It was a $750 addon at the time but now like $1,000.

Tims is the same cooker but narrow with no storage. It's extended on the front and has [2] Gas Fish Fryer Burners on the front so Tim can steam crabs or whatever. Since that pit had gas I had it installed with a 180,000 BTU burner in the fire box so he don't have to even use wood or coals.

This is the way the two sit in my driveway just outside my Kitchen. I set my 10'x20' Tent over top of my big one like a garage.

I recommend these pits to everyone. I did my homework and know who is known for making the best and have seen his great work. These pits stand right next to them for a fraction of the price. I WILL buy another Peroia Custom Cooker. The #1 KCBS Team BBQua' uses one and made a Mod that was added to mine for free.

Hey JB that Turbo Dog was "hitt'n" too. Them are some good chips for sure man. Thanks for all that stuff. You should have a nice full box by Friday of the Carolina stuff. Enjoy but watch out for the Catagory 5 Hurricane Hot Sauce. Don't try a shot of that stuff BOY. 3 types of peppers in that will jack yer as$ up. lol
