calico rice

I am planning on making calico rice to go along with the shish kabobs for the street festival I am doing in a few weeks. I plan on getting 25lbs of rice. Thats around 250 servings. How much green, yellow peppers and red onions should I plan on getting?
 
All the recipes I've seen say 1 red & 1 green pepper / 3 cups cooked rice, I always estimate 3 cups cooked rice to 1 cup rice uncooked, so 1 of each pepper / cup of rice.

There are 58 cups of rice in a 25 lb bag, but I don't think I would go that high with the peppers, I'd bet you could get away with 25 of each, 50 peppers in total, to give enough color to the recipe.

Just a guess or estimation, I've never done calico rice for 250 before! Good luck and please let us know how it turns out.
