POSOLE

1/2 cup carrots, diced finely
1/2 cup celery, diced finely
1 cup onion, diced
4 cups drained hominy
4 cups smoked pork, diced
4 cups beef broth
4 cups chicken broth
2 Tbs Blues Hog Rub
1/4 cup chopped cilantro stems
1/2 Tbs garlic
2 seeded Jalapenos, finely diced
1 tsp cumin

Saute the carrots, celery and onion in a bit of oil until wilted, then
add the rest of the ingredients and simmer for about an hour. Garnish
with a bit of cilantro leaves, chopped and a big squeeze of lemon or lime.

Well it sounds delicious to me! I love hominy and when you mix pork with it how could you go wrong! Thanks for the recipe Pigs!

I'll admit, I've never heard of posole. Looks a little like Brunswick stew....is it about the same consistency?
 
I'm new so what the heck do I know. Oh I know posole! Lived in New Mexico for a few years. Nothing better than a good bowl of Posole with New Mexico Red chile!
