I have to start watching for specials in my neighbourhood for ribs. To do 3 racks is a lot of work for so very little, especially when I give some ribs away to my cleaning lady.

I was worried about the cold for the smoker (not me), but she raised to temperature just fine. Lump charcoal, Minion Method, 3-2-(0.5) schedule. I love doing that stuff.
There was a breeze that morning, and that's why I was concerned. In fact, I thought it would help as I had one bottom vent open, and I was debating if another one had to be opened. It was perfect.
