well of course it's leaner cause it's wild, but the
butt was small and overcooked...ham was better,
but it's still a different texture than the domestics.
The hams have a lot less fat in both however, and
I perhaps should have injected....still, it took the smoke
flavor well and is pretty damn tasty.
I could probably serve that to a lot of folks and they'd
never know it was wild.
