Wild Hog

A buddy called this morning and told me he had a field dressed Hog for me and to meet him at academy in 25 min. So off I went and I've been busy ever since. Check it out, It's about 45 lbs as you see it. The loins taste great!

Link - It took about an hour and a half from the time I pulled the beast from the truck till I was ready to put the rub on it.

Bob - The taste of a feral hog is different but it's hard to say how. It just has more flavor i guess. Domestic commercial seem kind of bland. The wild meat is very lean though and you have to be careful with it.

My neighbor shot one last week....took it to the processor to get sausage made, but saved the loin,..we're cooking it this weekend. Should be interesting.
