What internal temp for fatties?

Hey guys, bout to try making my first fatty on the grill this weekend. My local shopright didnt have any Jimmy Dean, su i just grabben some "Jamestown Brand" Pork sausage. I have no idea how it is but i figgured it would be better than nothing.

Anyway, whats a safe internal temp to cook to? Ive never made one so im just gonna use a digi therm. till i get the hang of it.

Also, what are some good things to stuff them with. For tomorrow i was just thinking bout trying some chedder cheese and pepperoni?

I'd go 160* to 165*. No less.
As far as stuffins'.....name something. The cheddar and pepperoni sounds good.
I've done them with scrambled eggs, cheese, etc. The sky's the limit.
The trick is getting the stuff to stay inside. ;)
 
Well, here it is. Stuffed it with about 10 slices of pepperoni and some chedder cheese. I think i should have used more cheese but i can adjust that for next time. I figured i couldnt go wrong wrapping it in some bacon.


Going on the grill later today.. wish me luck!
