Weekend overnight butt cook pictorial

Started prepping 6 butts for pot luck on Sat night.

Hey whats that ?



That looks like a piece of bone.



This is why I don't own a resturant.



I found a higher than usual amount of " stuff " that I wouldn't want to accidently swallow on these six butts.

So anyways........On with the smoking.

On around 10:00 pm Sat night.



The three butts on the bottom rack of the uds were up to temp in 8 hours. I have to say that it was are pain to have to dig them out of the uds before the ones on the top were done.

In the end they were all good.

And the money shot. That is genuine KFC slaw.

I, too, have found an occasional small piece of bone in butts that I have purchased, not very often, but I check them closely now.

By prep, I mean rinsing, feeling for and removing bone, bone dust and other hard connective tissue. Sometimes there are some bloody nasty looking spots that I cut out.

BW said it best, this more like pushed pork rather than pulled. It only takes a few min to break one down and smush it around. Removing fat pockets is the only thing that takes a little time. That is just because I check them close. No one wants to get a big bite of pork fat in a pp sandwich.

The butts averaged about 8 lbs each.
