Never have smoked one to where I pulled it. I do however smoke em but I cover it with a package of bacon and slice it. Don't ask me what temp I cook it to because that was before I bought a thermo to take internal temps. Sorry I know that was not much help

Might be good if yall inject it with lard. Very lean meat. I have made home made chile out of it though...

I don't think it would do well pulled no matter how you cooked it. Venison is probably one of the leanest meats out there.
I like venison chops wrapped in bacon or in chili or ground with pork for sausages.
