I'm finally able to smoke two racks of ribs. It has been awhile. One rack has Wolfe Rub Original and the other has D-Dogs Rub Original. I found an older bottle of D-Dogs rub.

The parts I've smoking for seasoning meat.

I also have yard work to do.

Well ribs were a success with the company. I thought they were a little mushy. I'm going to have to wear more gloves and long sleeves. I got burn three times today. Once sticking my arm in the WSM getting out the meat I was smoking for seasoning meat on the bottom grate. Another time fooling around the kettle getting the ABTs ready, then on the panni grill I was using to make garlic bread.

I've included two pictures of the left over charcoal after 11 hours. I didn't smoke the ribs that long it was just that long when I got around to picking every up after the company left. It looked like enough charcoal to go another 11 hours.

The remaining charcoal after 11 hours of smoking ribs between 225 and 250.
