Types of pepper

What are the differences between these three types of pepper:

Black
Red
White

Just curious if I should be using a different type of pepper in my rubs.

Simply put:

Black = Bite
White = Warmth
Red = Heat

Once you start using your mill I bet you never buy pre ground pepper ever again. I have 3 different mills in the kitchen.

Have you ever attached your drill to your mill?
Makes short work of grinding a lot of pepper. (ala Alton Brown) 8-[

Been doing that way before AB did it on TV. My wife thought I was nuts till AB did it. Now it's ok now for some reason. Put a little black tape on the threads so you don't mess them up! #-o
