Two Butts on the WSM

The snow is falling, two 8 lb. butts are on and I'm going to bed, pictures in the morning...

I rubbed these two 8 lb. butts (Sam's Club's finest, $1.28 per lb.) at 11:00 AM
and put them in the fridge until 11:00 PM.



Fired up some Royal Oak and cherry wood. I like how blue flame stands out in the
dark. My Smokey Joe comes in handy as a place to start the fire.



Unwrapped and ready to go on the 18.5 WSM
(I'm thinking there should be a 22" WSM in my future).
The snow had already started. Set the alarm for 7:00 AM and went to bed.



"Chit" ... screwed up setting the alarm, it went off at 6:00 AM, checked
the computer all was good running at 225° and the PP was at 157° so
I went back to bed for an hour.



7:00 AM looking good. Stoked the fire and sit back and wait for 190ish.



It is 8:30 AM now and it is up to 160°, thanks to the Guru I can watch
while I type. Off to the kitchen to make some coleslaw and iron
skillet cornbread. More of the real porn when it is pulled.

Looking good. The Guru looks like a fun toy to have. I only have a couple of Nu-Temps that get used in the winter so I don't have to keep running in and out.

Just in case you are interested or have not see this up close, here is the PP I'm doing now. As you can see I opened it once to stoke the coals and it was open for a couple minutes, the PP spiked down too. I opened again to take a quick picture. The internal temp is now up to 171°.

They are only at 181° and I'm getting hungry another 10+°, a short rest and I'm eatin' sammies --- pictures to follow.
