Turkey Brining 101

There are two bags of guts in every bird ... There are two bags of guts in every bird ... There are two bags of guts in every bird ...

Getting ready for my first turkey on the WSM, brining tonight, smoking tomorrow. More pictures when the smoke rolls.

Lesson #1 - When brining in 2.5 gallon zip lock bags ... DOUBLE BAG! Big disaster averted, just a little water in the fridge.

Oak, it was a small 12 pounder. It fit, but was pretty tight, although it held 1 gallon of brine too. I did double bag after almost having a disaster with a single bag. T- Day I plan on a bigger bird so will use double bag with Reynolds oven turkey bags and put it in a small cooler with ice. No more disasters in the fridge.
