Turkey Breast

Smoked a 7lb self basting Shadybrook Farm breast over hickory, pulled at 160º. This was a fatty delicious breast, one of the better self basting birds I've done.

Now not that the poor turkey lurkey part wasn't moist of course..but I have a theory it woulda been twice as moist if cooked face down. Been trying to teach Emeril that trick for years. I think he finally took it in. He is a hard headed portugese from Falls River, Mass. Is it any wonder the boy don't know how to cook? Now it would not have been as purty of course.
