Turkey boobs

Thought I'd throw my hat in the ring with some pics of my cook this evening..

Smoked a 7 lb turkey breast. 3 1/2 hours in a brine consisting of:

1 gal. distilled water
1 cup kosher salt
1 cup sugar
Worcestershire, garlic & onion powder, sage, thyme, and rosemary.

Cooked it over apple wood in the drum @ 325 for about 2 hours 15 minutes..








Very juicy and tasty! The dark spot on the bottom slice is from the juice on the knife.. I'm going to let it cool down for a bit, refrigerate overnight, and slice thin tomorrow..

Very tasty looking. I have a frozen turkey left over from Thanksgiving that's thawing out in the fridge right now. Probably be ready for a spin in the WSM by Tuesday.
