Two turkeys went on at around 1:30. There was more prep work than I anticipated. The turkey on the upper deck is injected with Wolfe Rub Bold using a modified version of Larry's original recipe. The other is injected with Tony Chachere's butter marinate.



 
Cliff, please don't wait to pull that turkey when that pop up timer pops!!!! I see it sitting in the breast and it looks harmless enough, but it will ruin your bird!!! Pull them birds when the breast hits between 163-165* and the thigh is 170* or more. Please for the love or good smoked turkeys don't wait till the pop up pops!!! The ones that come in the birds are set to go off at 180*! :shock: However you can buy pop up timers that are set for lower temps, those would be ok!! Sorry to rant about the timers! The turkey looks great, I'm looking forward to your results!!!
 
Dont worry Larry,

The pop up timer is there just for fun. If you look close you can see a maverick probe stuck on the top of the breast. :LOL:
 
The "Bold" Turkey was very good. It was very juicy and tender. The WRB injection provided some sweet and heat to the meat. I substitued cranberry juice for apple juice knowing that at Thanksgiving I eat turkey and cranberry sauce in the same bite.

It gave it a tart/sweet/afterburn flavor.

Cliff that turkey looks infreakingcredible!!!! WOW [smilie=a_bravo.gif] Super Duper job there buddy!! Did you add the butter to the injection? Did you have to strain the mixture using the Bold? Again, that's an incredible looking turkey!!!

The mixture went like this:

2 C Cranberry Juice
1/2 C WRB
1 TBS Honey
1/2 C Butter ( I was out of sticks)

Bring to a slow boil for one min and remove from heat. I hurried the cooling process by placing the whole pot in cold water since I was ready for it right then.

Straining would work best. I kinda worked around and under the ingredients that floated to the top.
