So far its the only way ive ever tried and my WSM rides almost perfectly at 225 with a 1/2 panfull of water.

First few times I used the WSM I followed the directions, got the ring full of ash-gray charcoal, and then spent the rest of the cook trying to get down to something less than pizza-oven temps. 230? are you kidding?



Now that I'm a lot smarter, I never consider doing anything but Minion Method.
