So I smoked a tri tip but didnt account for the low heat that I smoked it at and undercooked it. I tried something new too. I put bbq sauce on it at the end. I ended up having to cut it in strips and grilling it but I just wanted to share my boneheaded mistake with everyone. I smoked it at about 200° for 3 hours and 30 mins. Got a good smoke ring but not cooked all the way through. Still was tender and good flavor at the end of grilling it. Here's son pics of my Fuck up and then correcting it.

Tri Tip should be eaten rare-med-rare.........next time if you want a char on the outside, throw the tri tip on a grill for a couple minutes per side. That's called a reverse sear. I would have eaten the first pic's myself!

I'm with Larry, no more than medium rare. IMO Tri Tip should be grilled indirect with red oak 30-45 minutes, 125° internal and then seared at the end, not a long smoke.
