Last pork loin I got I cut up into chops for stuffing. Just because I like chops. I'm sure that someone will come up with a more creative way to do it up.

As my Uncle Bigwheel always sez.....if it ain't got a bone in it, it ain't no poke chop! :LOL:

With that said, usually when I get a whole loin I do cut them in half and cut some into thick 'chops' and either grill or stuff. The other half, I either smoke whole or butterfly and stuff and then grill. Any way you do it, it'll be good!
