Thawing Brisket

If you're like me with no room left in the frig, stick it in a small cooler and keep it shut. In about 2 days it's thawed. I've done briskets, chickens, loins and even turkeys this way with no problem. It will stay below the danger zone while thawing.
 
I use a small Igloo cooler with no ice. The smaller the better. Less air and keeps the thawing down to a slow process as not to spoil any meat.
