Well I still couldn't find one of the spices an oddly I thought that was a more common spice. Hahahaaa...

Made up a batch of the original and the citrus rub. I have 10 pounds of leg quarters that I'll try app the new runs on tomorrow. Then on the uds with some apple wood... Mmmm... Can't wait... Hahaha

I put them on the UDS when it 325 degrees and kept it pretty much there for about 1.5 hours... I had to what for some people to get to my house, so when they chicken hit about !85 degrees, I shut down the bottom vent, leaving the top open, and the UDS dropped to 125 degrees quickly. They stayed on there for about 25-35 minutes longer. I probably should have taken them off, but it didn't dry them out at all.
