Tennessee Whole Hog

I have a friend who has been cooking whole hogs out in west Tennessee since he was a kid. After seeing a TV show a while back about whole hog cooking in that area, he advised he grew up there and sent me this pic the other day from a recent family get together. The metal to the right goes over the hogs. Thought it was a cool pic of old time BBQ

Looks like a great day of coking and eating, the only problem I see is no one has a cold beer in hand. :P

Whole hog over direct coals. Got to love it. I have done a few like that, but never so close to the coals.(I wonder how far the coals were) Just think the fat dripping on the fire and the sizzle, smoke just make for a more tasty pig. We went to a whole hog cook last weekend, (LP Gas ) No flavor, tons of sauce, no wood. But folk liked it. Why, I'll never know.
