Question Temp control question for green egg type smokers

Hello all.
I was wondering if I could get some different suggestions on my slight problem. When i first start out getting my smoker ready they say open all the vents and let the temp come up then close your vents down to the desired position to get the temp you want. I have no problem getting my temp where I want it. My problem is the first part. How high do you let the temp get before closing down??? I once wasn't paying attention and it was like 1500 degrees and took like 3 hours to come down. Another time it was taking so long that i closed down so much the fire went out . what temp do you guys and gals get to before to close down the vents. The temp I'm looking to maintain is around 220 -250 just to let you know where I'm looking to get. Thanks in advance and happy 4th
