I thawed out a bunny from the freezer and soaked it in some EVOO and garlic. I used the big barrel loaded with oak. 225* for about 2hours.

Made a nice lunch.
I had some Kingfish in the freezer too and brined it in salt water then added some salt and pepper before cooking. The temp was about 125* and took about 7 hours. I am going to make some fish spread out f most of it tomorrow.

Wow, that sounds good!!! Kings are good with lemon pepper and butter in foil boat smoked... Yum!!!

SS I'm with you on the lemon pepper and butter. Haven't had no bunny in years. Except the chocolate kind. :LOL:
 
Hey Gh, nice to see you again... Ill be down there from Jan 16ish to Feb 20ish... Save some of that good stuff for when I stop by !!!
