Surf & Turf

I thawed out a bunny from the freezer and soaked it in some EVOO and garlic. I used the big barrel loaded with oak. 225* for about 2hours.


Made a nice lunch.
I had some Kingfish in the freezer too and brined it in salt water then added some salt and pepper before cooking. The temp was about 125* and took about 7 hours. I am going to make some fish spread out f most of it tomorrow.

Wow, that sounds good!!! Kings are good with lemon pepper and butter in foil boat smoked... Yum!!!

SS I'm with you on the lemon pepper and butter. Haven't had no bunny in years. Except the chocolate kind.

It is a Makerel...don't think you can catch them there, maybe some other way. Check with yer local Fish Monger.
