Summer Sausage

Ran outa summer sausage, had ta eat store bought last week!

So whooped up a 10 pound batch taday. Also tryin a new recipe fer a Garlic an pepper blend.



That little feller there be the Garlic an Pepper stick. Lookin forward ta tryin that en! Thier on Trident 1 an I'll put up some more pics after the smoke.

Great job Hillbilly. Loves some of that summer sausage with good cheese and cold beer..maybe a cracker if you got some handy. Looks like you got some large bore cellulose on the casings. Do that one be true or false? If true dont think I ever seen none quite that large diameter before. You a fortunant boy to find them. I got millions of recipes squirreld away if you ever need one. Just give me a holler.

Came out perty good, need a bit more pepper in the garlic an pepper stick, fix that next time.

Need ta get my fridge smoker done so I can smoke at a cooler temp.

Bigwheel, I was lucky nough ta find them at a farm store on clearence fer buck ten a package! Bought everthin the feller had!

Will have ta take ya up on some recipes in the near future, thanks.
