Stuffing a Fatty

I was thinking of a cream cheese/cheddar and jalapeño stuffing for the fatties this weekend. Sort of an abt with sausage casing.

Any other recommendations for fatty stuffings??

Thank you for the tip about the cream cheese. i was also thinking of wrapping the whole thing in bacon as well to help prevent seepage.

That sounds pretty good to me. I have stuffed mine wit peppers (of your choosing)onions, and monerey jack cheese. I also like to add maple syrup to the stuffing sometimes.
